Summer Mediterranean fusion


During the summer Olive's Food Innovation Team created a “Mediterranean fusion” feast of food. Featured as part of the “Van” street food pop up, we saw rich earthy flavours from Greece fused with the vibrant influences of Spain.  The concept was created and developed as a collaboration by Chef's Pedro Vega Fuentes, originally from Spain and Lefteris Kotsinis from Greece.


The dishes that proved the most popular were:

Souvlaki chicken skewer dressed with Spanish style sauce piquillo and crumbled feta


Croquetas de Bacalao with Fasolada, Xeres dressing with Greek white bean and vine leaf stew


Tortilla de Patatas, pickled walnuts, tzatziki, Pastourma and chorizo


Rocket and Manchego salad, toasted almonds, sun blushed tomato, Valencia orange and olive oil dressing

Patatas Bravas with grated halloumi and oregano


All of the dishes blend the best elements of the two cuisines, combining fresh ingredients and bold flavours, creating a unique Mediterranean fusion.
